Easy Breakfast Potato Pie

6 Oz Hash Brown Potato Mix With Onions
1 Quartt hot water
5    eggs
1/2 Cup  cottage cheese
1 Cup  Swiss cheese; shredded
1    green onion; chopped
1/2 Tsp  salt
1/8 Tsp  pepper
4 Drops hot sauce
6    Bacon Slices;
-cooked,/crumbled
paprika

Cover hash browns with hot water; let stand 10 minutes.
Drain well. Beat eggs; add potatoes and remaining
ingredients except bacon and paprika. Pour into a
well-greased 10-inch piepan.  Sprinkle with bacon and
paprika. Cover and refrigerate at least 8 hours. Place cold
piepan, uncovered, in cold oven.  Bake at 350 degrees for
35 minutes or until potatoes are tender and eggs done.
Makes a great hearty weekend breakfast for the family.

Ernie's Artichoke Dip

1 can of artichoke hearts, the size of a Campbell's soup can, get the
cheapest
1/2 cup more or less mayonnaise, you can cut or substitute with non-fat
yogurt
1/2 cup grated parmesan cheese, the sprinkle kind is fine
a clove or two of garlic, be careful here

Smoosh all of this together, put in an appropriate sized crock or small
serving bowl. If you have one of those miniature crock pots, this is a
chance to use it. You may serve this as smooshed but the flavors marry
better if you heat it in oven/microwave/toaster oven/crock pot until
it's kind of bubbly. Serve with wheat thins or your favorite crackers.

Greta's Three Cheese Canapés

2 packages (10) refrigerator biscuits
1 Cup shredded mozzarella (4 oz)
1 Cup ricotta cheese
1/4 Cup grated parmesan cheese
1/4 Cup chopped parsley
1 small jar spaghetti sauce

Put one biscuit  in each of 20 muffin cups, forming a shell
Mix together cheeses and parsley
Put 1 Tbsp. in each shell
Put 1 Tbsp sauce on top of each.
Bake 400°, for 20 min.

Serve hot as snacks while you're watching TV.. Or you can serve these  for a main dish with a salad for dinner.

Mexican Pinwheel Appetizers

1 pkg.          Large flour tortillas
8 oz.           Cream cheese, softened
4 oz.can        Chopped black olives
4 oz. jar       Chopped red pimientos
4 oz. can       Chopped green chiles
3 Tbs.          Chopped green onions

Mix all ingredients together.   Spread mixture on tortillas and roll up.   Store in refrigerator until ready to serve.   Slice 1/2-inch slices and serve.   Hint:  Double or triple this recipe, because they go fast!  They also keep well in the refrigerator

Sausage Balls Appetizer

3 cups Bisquick
1 Lb. Bulk Pork Sausage
16 oz. Shredded  Cheddar Cheese
1/2 cup grated Parmesan Cheese
1/2 Tsp Rosemary Leaves
1/2 Tsp Parsley Flakes

Heat oven to 350 . Mix all ingredients thoroughly by adding Bisquick mix gradually. Shape mixture into 1 inch balls. Place in Jelly Roll pan and cook at 350 degrees until done 20 to 25 minutes. Serve warm. Can be frozen: Remove from freezer, heat in overn, serve immediately. Makes about 8 1/2 dozen appetizers.

Cowboy Caviar Appetizer Recipe

 2            tablespoons  red wine vinegar
1 1/2      teaspoons  hot sauce -- (or more to taste)
1 1/2      teaspoons  salad oil
1            clove  garlic -- minced
1/8      teaspoon  pepper
1           Medium  Avocado
15 oz.    can black-eyed peas
11 oz.    can  corn kernels
2/3      cup  green onion -- thinly sliced
2/3      cup  cilantro -- chopped
1/2      pound  tomatoes -- chopped

In a large bowl, mix vinegar, hot sauce, oil, garlic, and pepper. Peel, pit and cut avocado into 1/2 inch cubes.  Add to vinegar mixture and mix gently to coat. Drain and rinse peas and corn.  Add peas, corn, onions, cilantro and tomatoes to avocado.  Mix gently to coat.  Add salt to taste. Serve with chips as an appetizer, or add cabbage and mix to make a salad.
